Ingredients:  
In a large bowl, cream following 3 ingredients until light and fluffy:
1 cup butter, room temp.
1 cup packed brown sugar
¾ cup white sugar

Beat into butter mixture:
2 eggs
1½ tsp. vanilla

Gradually add to creamed mixture and mix well:
2⅔ c. flour (can add some whole wheat if you like)
1¼ tsp. baking soda
1 tsp salt (or a little more if you like your cookies a little salty!)

Stir in:
2 cups chocolate chips
1 cup butterscotch chips
1 cup flaked coconut

Shape dough into balls and place in airtight container. Cover and refrigeraqte overnight or at least a few hours.
To bake: Place dough balls on baking sheets. Press a shallow indentation in center of each with your thumb, reshaping sides to smooth any cracks. Bake in 400º for 10-12 minutes or until edges are golden brown.

This recipe makes a lot of cookies! We like to bake only a portion at a time because they are so good warm out of the oven. Then the rest of the dough balls are ready and waiting in the fridge for the next time we'd like to enjoy freshly baked cookies. Dough balls freeze well, too! Can substitute M&M's.
