1¼ cup flour
¼ tsp. salt
½ cup butter, softened
1/3 cup sugar
1 egg, separated
1 tsp. almond extract
1 cup flaked coconut
¼ cup apricot preserves

Directions:
Directions:
Cream together butter and sugar until light and fluffy. Add egg yolk and extract. Beat until blended. Gradually add flour, salt and beat until blended. Chill 2 hours

Shape into small balls, dip into slightly beaten egg white, and then roll in coconut. Place 2” apart on greased baking sheet. With finger tip, make depression in middle of ball.

Bake at 350, 20-25 min. (cookies should be slightly brown)
Cool 30 sec. on cookie sheet. Remove and fill with preserves. Makes 24 cookies.
