1/2 cup unsalted butter at room temperature
1/2 cup granulated sugar
1/2 cup packed dark brown sugar
1 large egg at room temperature
1 tsp vanilla extract
1 cup (125 grams) all purpose flour
1/2 cup plus 2 TBSP natural unsweetened cocoa powder (not dutch processed)
1 tsp baking soda
1/8 tsp salt
1 TBSP milk
1 cup white chocolate chips
1 bar (approx 3 oz) Green and Black's dark chocolate (70% or 85%) chopped

1. In a large bowl beat the butter and sugar until fluffy and light in color (3-5 min). Beat in the egg and vanilla. Scrape down sides of bowl as needed.
2. In a separate bowl whisk together flour, cocoa powder, baking soda and salt. With mixer on low speed add the flour mixture to the butter and egg mixture. Add the milk and beat until combined. Mix in the white chocolate chips and chopped dark chocolate.
3. Cover and Chill the dough for at least 3 hours, preferably overnight.
4. Preheat oven to 375°.
5. Use a size 60 cookie scoop to scoop dough onto a parchment lined cookie sheet. Space cookies 2-3 inches apart.
6. Bake for 7 min. Allow cookies to cool for several minutes on the cookie sheet before removing to a wire rack to cool completely.
