1 ¼ cup firmly packed brown sugar
1 cup vegetable shortening
1 tsp. vanilla extract
2 large eggs
2 cups all-purpose flour
6 Tbsp. cocoa powder
½ tsp. salt
¼ tsp. baking soda
⅔ cup mini chocolate chips
⅓ cup sugar
½ cup powdered sugar

Beat brown sugar, shortening, and vanilla in a large bowl with electric mixer on medium speed until well blended. Beat in eggs. Stir together flour, cocoa, salt, and baking soda in a small bowl. Gradually add to shortening mixture, beating until well blended. Stir in chocolate chips. Cover and chill for 2 hours.
Preheat oven to 375º and grease a cookie sheet
Form dough into 1 ¼ balls, roll in sugar then in powdered sugar to coat completely. Place 2 inches apart on a baking sheet. Bake 8 to 10 minutes or until cookies are set. Cool then enjoy!
