1 Egg
½ c. Sugar
½ Stick Butter
1 pkg. Chopped Dates
½ c. Chopped Pecans
1 pkg. vanilla Waffers
Angel Flake Coconut®
Red and Green Candy Cherries
Cool Whip®

Directions:
Directions:
In sauce pan add dates, cover with cold water.
Beat Egg, Butter and Sugar.
Add to dates and cook on medium heat, about 3 minute or until thick.
Let cool.
Put mix on a Vanilla Waffer then cover iwth Cool Whip® top with coconut and decorate with bits of red and green candied cherries.
Store in closed container in the Refrigerator.

This has been served by Grandma and Grandpa Clemment for years at Christmas and serves as a source of laughter for the grandchildren. Grandpa loved these but the grandchildren did not like coconut and really didn't want to eat then after months in the refrigerator. Honestly, they are good if eaten within a week.
