Banana Bread Cookies with Cream Cheese Frosting Recipe

¾ c. butter flavor shortening
¾ c. sugar
1 egg
1 tsp. vanilla extract
1 c. mashed overripe bananas
¼ tsp. salt
1 tsp. baking soda
2 c. flour

Frosting:
½ c. butter
6 T. brown sugar
4 T. milk
¼ tsp. vanilla extract
pinch of salt
3¼ c. powdered sugar

Directions:

1. Preheat oven to 350º F. Spray baking sheet with non-stick cooking spray.

2. Cream the shortening and sugar together in large mixing bowl. Add egg and vanilla and beat an additional two minutes. Fold in mashed bananas.

3. In a separate bowl, combine flour, baking soda and salt. Add the flour mixture to the wet ingredients bowl and mix to combine.

4. Grease a cookie scoop with non-stick cooking spray. Scoop out the dough onto the prepared baking sheet and bake in the preheated oven for 8-9 minutes.

Frosting:
1. In a medium size saucepan, melt together the butter. milk and brown sugar over medium heat. Stir in vanilla and salt. Gradually stir in the powdered sugar and allow the frosting to cool 10 minutes before spreading.
