Ingredients:  
10 potatoes, dice and boil till crisp tender
1/2 c celery, chopped
1/2 c sweet onions, chopped
4 hard boiled eggs, chopped
1 Tbsp parsley

Dressing:
2 eggs, well beaten
1/2 c sugar
1/2 c vinegar, diluted with with 1/2 c cold water
2 tsp of mustard
1/2 tsp salt
1/4 tsp pepper

8 slices of bacon, cooked crispy and crumbled

Directions:
Directions:
Cook potatoes, drain, cool.

In med size pot: add beaten eggs, sugar, vinegar, water,
mustard, salt & pepper. Boil over med heat till thick.

Take off heat and add to potatoes, celery, onions, parsley
and chopped hard boiled eggs, Fold in dressing trying not to break up potatoes.

Add crumbled bacon and mix.

Can eat hot or at room temperature or chilled.
