1 1/2 cups granulated sugar
1 cup butter
1/2 cup coffee (instant or brewed)
1 cup dark molasses
2 eggs
5 1/2 cups flour
2 tsp. baking soda
2 tsp. ginger
1/2 tsp. salt
1/4 tsp. ground cloves
Frosting:
1 envelope unflavored gelatin
1 cup warm water
1 cup granulated sugar
2 cups powdered sugar
1 tsp. vanilla

Directions:
Directions:
Mix ingredients for cookie dough in order given. Wrap dough in waxed paper and chill overnight. Next day, heat oven to 350º F. Roll out dough to 1/4 inch thickness. Cut with a cookie cutter (rectangular shape like spam can). Place on un-greased cookie sheets. Bake on bottom rack 4 to 5 minutes or until cookies puff up. Switch cookies to top rack and bake for 4 to 5 minutes more for chewy cookies (8-10 minutes for crisp cookies).

Frosting: Combine gelatin, warm water, and granulated sugar in a large saucepan. Bring to a boil; reduce heat and simmer for 10 minutes. Remove from heat and add powdered sugar. Beat 10 minutes or more with a hand beater set at low speed until mixture thickens. Add vanilla and a pinch of salt. Allow to cool. (Can tint cookies light green for holidays with green food coloring if choose). Frost cookies.
