¾ c. butter, softened
1 c. firmly packed brown sugar
½ c. chunky peanut butter
¼ c. pure maple syrup
1 egg
1 T vanilla extract
1 ¼ c. whole wheat pastry flour
2 T unbleached white flour
½ tsp baking soda
½ tsp salt
1 c. quick oatmeal (opt)
1 ½ c. chocolate chips

Preheat oven to 375°. In a large mixing bowl, cream together the softened butter and brown sugar. Add the peanut butter and maple syrup. Add eggs one at a time, then the vanilla extract. Mixture should become light and fluffy. The key to this recipe is to let the mixer whip the peanut butter-egg mixture for a little while until it is fluffed up like whipped topping. In a small bowl, mix all dry ingredients and slowly add them to the creamed mixture, mixing constantly. Add the chocolate chips. Drop batter by well rounded teaspoons onto a lightly greased cookie sheet and criss-cross with a fork dipped in flour, just like traditional peanut butter cookies. Bake until cookies are lightly browned around the edges, pale in the middle. Do not over bake. Let cookies cool for a few minutes before removing them from the sheet. Bake 8 to 10 minutes in a 375° oven. Makes 2 ½ dozen.
