2 cups rolled oats
1 cup brown sugar
¼ lb melted butter
2 tsp baking powder
1 egg

Optional: 1 tsp almond extract

1. Preheat Oven: 350º
2. Grease cookie sheet.
3. Melt butter and add dry ingredients to butter.
4..Add beaten egg and mix well.
5. Bake 8-10 minutes.
6. Allow to cool for a minute or two before removing from baking sheet/pan.

These cookies are thin and crispy and can be hard to remove from pan. Letting them cool for 1-2 minutes makes removal easier.
