1 cup Sugar
3/4 cup of Shortening
1 cup Finely Grated Carrots slightly cooked (you may cook and mash carrots if
preferred)
1 Egg
2 cups of Flour
2 tsp. of Baking Powder
1/4 tsp. of Salt
1 tsp. of Vanilla
1/8 tsp. Orange extract

Frosting:
1/2 cup Orange Juice
1 Tbsp. Grated Orange Rind (Zest)
2 Tbsp. Butter
2 cups Powdered Sugar

Directions:
Directions:
Cook carrots till tender. Drain. Blend and beat sugar and shortening until light and fluffy. Slowly blend in egg, flour, baking powder, salt, vanilla, and orange extract. Drop by spoonful on greased baking sheet. Bake @ 350º 12-15 minutes. Frost while cookies are warm, but not hot.
