1 cup shortening
1½ cups packed brown sugar
2 eggs
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1½ cups diced fresh or frozen rhubarb
¾ cups coconut

Frosting:
3 oz cream cheese
1 tablespoon butter, softened
1½ cups confectioners sugar

Directions:
Directions:
In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in eggs. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in coconut and rhubarb. Drop by rounded tablespoons 2 inches apart onto a greased cookie sheet.

Bake at 350º for 10-14 minutes or until golden brown.
Cool 1 minute before removing to wire racks to cool completely.

Frosting:
In a small bowl, beat cream cheese and butter until fluffy. Add sugar and vanilla mix well. Frost cookies.
