1 1/2c vegetable oil
2 c white sugar
2 tsp baking powder
½ tsp baking soda
4 eggs
2 c flour
2 tsp cinnamon
½ tsp salt
1 tsp vanilla
2 c finely gated carrots
1 c crushed pineapple (strained)
½ c raisins (optional)

Cream Cheese Icing:
4 oz cream cheese
½ c butter
1 c icing sugar
½ tsp vanilla or ¼ t almond extract

Directions:
Directions:
- Mix together flour, salt, cinnamon, baking power and baking soda in a large mixing bowl and set aside
- In a small bowl mix together sugar, oil, vanilla and eggs
- Add the sugar mixture to the flour mixture, mix well
- Add the carrot, pineapple and raisins
- Pour into a greased and floured 9 x 13 pan
- Bake at 350 degrees for 50 mins

For the Icing:

- Whip together the cream cheese and butter
- Add icing sugar and vanilla and whip again
- Once the cake has cooled you can ice it

This is Gramma Young's recipe it is requested often when we have a big gathering. Gramma always used the almond extract I prefer it too but if your worried about nut allergies use the vanilla. Anytime a recipe calls for cream cheese icing I use this one.
