1 cup peeled Apple, chopped
1 cup dates, chopped
1 tsp baking soda
1 cup boiling water
½ cup shortening
1 cup white sugar
1 egg
1 tsp vanilla
1½ cup all-purpose flour
½ tsp salt

Topping
¼ cup butter
½ cup brown sugar
¼ cup milk
1 cup shredded coconut

Directions:
Directions:
Preheat oven to 350°
Grease an 8 x 8 cake pan.
Combine the first four ingredients and set aside to cool.
In a new bowl, Mix the remaining ingredients together.
Combine the two groups together alternately.
Pour in to pan and bake for 50 minutes.

Topping:
Combine ingredients in a small saucepan. Heat on stove top until the butter and sugar are melted.
Spread over the hot cake.
Return to the oven or broiler to brown the topping. Watch it carefully!
Cool on a rack.

We often went to lawn bowling tournaments as a family. Each all day tournament involved a lunch break. Grandpa Jackson always brought a canned ham - the kind that came in a tin and had a key attached that was required to open it. (The key frequently broke before the can was opened!!) Grandma Mabel always brought this cake for dessert. Grandma Jean made the salads to complete the menu. There was always lots of food and frequently other bowling friends joined us for lunch. Good times!
