Grandma Alice’s Gumdrop Cookies

1 cup Crisco (or 1 cup softened butter (2 sticks), or ½ cup each butter and Crisco)
1 cup each white and packed brown sugar
2 eggs, beaten
1 tsp vanilla
2 cups quick rolled oats
2 cups flour
½ tsp salt
1-1/2 tsp baking powder
1 tsp baking soda
1 cup flaked coconut
1 cup gumdrops, cut up

Directions:
Directions:
Cream butter and sugars together.
Mix eggs and vanilla into butter mixture.
Mix together dry ingredients.
Add coconut and gumdrops to dry ingredients, mixing well and keeping gumdrops separated.
Stir half of dry ingredients into butter mixture. Mix well. Stir in remaining dry ingredients. Mix well.
Dough will be very stiff.
Drop batter by teaspoonfuls onto greased cookie sheet. Bake 10-12 minutes at 350F.
Makes 6 dozen 2 inch cookies

Cut the small spice drops into quarters.
Chill dough at least one hour before baking.
Use a level 1 Tablespoon scoop (1”) and roll cookies into balls.
Bake cookies for 12-14 minutes or until lightly browned, one cookie sheet at a time in top third of oven, turning cookie sheets halfway through baking.
