3 cups all purpose flour
2 tsp. baking powder
1 cup sugar
1 cup (salted) butter, cold & cut into chunks
1 large egg
3/4 tsp. pure vanilla extract
1/2 tsp. pure almond extract

Directions:
Directions:
1. Preheat oven to 350º
2. Combine the flour and the baking powder, set aside.
3. Cream together the sugar and the butter, then add the egg and the extracts and mix.
4. Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.
5. The dough will be crumbly, so knead it together with your hands as you scoop it out of the bowl for rolling.
6. Roll out on a floured surface 1/4" thick and cut into shapes.
7. Place on parchment lined baking sheets. (I recommend freezing cut out shapes on the baking sheets for 5 minutes before
baking. )
8. Bake for 10-12 minutes.
9. Let set for 3 or 4 minutes on baking sheet then transfer cookies to cooling rack.
