6 Tbls Butter, cut into pieces
2 cups sugar
½ cup milk
¼ cup unsweetened cocoa powder
½ cup creamy peanut butter
1 tsp vanilla extract
2 ½ cups quick-cooking oats

Directions:
Directions:
Before getting started, make sure to gather all of your ingredients and measure everything out. Line two large baking sheets with parchment paper and set aside. (I also sometimes just put wax or parchment paper on a clean counter.)

Place the butter, sugar, milk, and cocoa powder in a saucepan and heat over medium-high heat, making sure to stir often until the butter is melted and everything is well combined. Bring the mixture to a rolling boil and allow to boil for approximately 3 – 4 minutes. Stir occasionally.

Remove from heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the oats and mix until all of the oats are coated with the mixture and everything combined.

Drop spoonfuls of the mixture onto the prepared baking sheets. Allow to cool for 20 – 30 minutes and enjoy!

NOTE: If cookie mixture is too dry, add a little milk and stir before dropping cookies. This has saved me from many failed batches. If too wet and cookies are not firm, next time boil for another minute or so.

CHANGE RECIPE: For those who LOVE peanut butter more than chocolate, you can omit the cocoa and when it comes time to add the peanut butter, add 1 cup! So good!
