1/2 cup brown sugar
1 1/2 cup molasses (green label)
1 1/4 cup shortening
1 egg
3 cups flour
1/2 tsp ginger
1/2 tsp salt
4 tsp baking soda
1 tsp cinnamon
1/2 cup boiling water

Directions:
Directions:
1. Combine 1/2 cup brown sugar firmly packed, 1/2 cup molasses, 1 1/4 cup shortening, 1 egg, mix & beat well.
2. Add 2 cups flour sifted with 1/2 tsp ginger & 1 tsp cinnamon & mix well. Add 1/2 cup boiling water & then stir in 1 cup flour. Mix & place in refrigerator for 30 minutes or more.
3. Then mix 2 cups flour, 1/2 tsp salt, & 4 tsp soda & sift together 3 times. (This is important cause of the amount of soda).
4. Add this last to the other mixture & chill for several hours before baking. I mix more up in the afternoon & refrigerate overnight. Easier to handle & need less flour to roll out.
5. Roll about 1/4 inch thick using as little flour as possible
6. Bake for 12-15 minutes at 350, watch they burn easily.
7. Remove and ice immediately. I used powdered sugar, butter & milk.
8. I use a 2 1/2 in or 3 in cookie cutter. I only do one part at a time. Then I can roll, cut, & put cookies in the 2nd pan. This way you can ice then immediately.
