Ingredients: 2 c flour 1 1/2 tsp baking powder 1/4 tsp salt 1/2 c butter or margarine (soft) 3/4 c sugar 2 eggs 1 tsp vanilla 1 1/2 c Cranberry Almond Crunch Cereal 1/2 c dried cranberries 1/2 c white chocolate chips

Directions:Preheat oven to 325º. Mix flour, baking powder and salt in a bowl. Beat butter and sugar in a bowl with your electric mixer until light and fluffy. Blend in the eggs and vanilla. Gradually add flour mixture beating well after each addition. Stir in the cereal, extra cranberries and white chocolate chips. Divide the dough in half and shape each half into a 14x2 in log with lightly floured hands. Place on greased baking sheet. Bake for 30 minutes or until lightly browned. Cut each log in half and remove without breaking by using two spatulas and place on a cutting board. Then, use a large knife to diagonally cut each log into biscotti pieces. Place biscotti slices back on the baking sheet on their sides this time. Then bake for an additional 20 minutes or until slightly dried. Remove from baking sheet, cool and eat! |
