1 c. room temperature butter (2 sticks)
1 c. granulated sugar
2 large room temperature eggs
1 tsp. pure vanilla extract
1 tsp. almond extract
3 c. flour
½ tsp. salt

Icing
6 c. powdered sugar
¼ - ½ c. whole milk
¼ c. light corn syrup
2 tsp. almond extract
Gel food coloring (in desired colors for decoration)

Using an electric mixer, cream the butter and sugar on medium speed until light and fluffy. Add the eggs, vanilla and almond. Beat until combined. Add the salt and flour; beat until you have a smooth dough. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about one hour or until firm enough to roll.

Roll out dough to ¼ inch thickness, making sure the dough doesn't stick to the counter Cut out desired shapes.

Use parchment paper lined cookie sheets. Before baking, place sheets in the refrigerator for 15 min. to chill the dough to prevent the cookies from spreading and losing their shape. Sprinkle the cookies with sparkling sugar if they won't be frosted.

Bake 350º 8 - 10 min. or until edges are just starting to brown. Let cool on the baking sheet for a few min. and then transfer to a wire rack to finish cooling.
Let icing completely dry (several hours or overnight before storing.

Icing
Mix sugar and ¼ c. milk at low speed until smooth. Add milk 1 tbsp. at a time as needed to create a smooth mixture. Add corn syrup and almond extract. Outline icing should be the consistency of toothpaste. Flood icing should be the consistency of corn syrup. Add food coloring until desired color. Pour into bottles, decorator bags or a cup. Keep unused icing sealed until ready to use.
