Filling:
1 - 375 gram pkg of chopped dates
1 cup of water

Cookie Dough
2 cups flour
1 1/2 tsp baking soda
1 tsp salt
2 cups packed brown sugar
6 cups quick oatmeal
1 cup melted margarine or butter
Enough water to make a soft ball but not sticky approx 7/8 cup

Directions:
Directions:
Filling: Chop dates until very fine. Add to medium saucepan with water.
Cook over medium heat until dates are soft and mixture has thickened and easily spreadable. Set aside to cool.

Cookie Dough: Preheat oven to 350º. Blend and sift together flour, baking soda and salt. Add flour, oats, brown sugar, and melted butter. Combine well. Add water slowly to make a soft but not sticky dough. Place dough on a floured surface and roll out to 1/4" thick. Cut with a floured cookie cutter. Cook cookies for 7 minutes.

Once cookies are cooked you can assemble by spreading date mixture on top of cookie and placing another cookie on top.
