Ingredients: 6 eggs at room temperature 200 grams sugar 210 grams soft butter 600 grams white flour 100 grams whole wheat flour 30 grams baking powder 5 grams baking soda 4 medium apple (peeled and sliced thin) Zest of 1 lemon
Icing sugar for dusting

Directions:Beat well the eggs with sugar with an electric mixer or hand mixer until all the sugar is well incorporated and light yellow. After that if using the stand up mixer, switch the whisk with the hook, if using the hand mixer, continue with a wooden spoon. Incorporate butter a small piece at the time and flour a little at the time. The dough will be somewhat sticky. Add the lemon zest and the apples cut in small pieces. Mix enough to incorporate the apples. Prepare cookie sheets with parchment paper, drop the cookies by using an icecream scoop or with the help of 2 soup spoons, (they won't be perfectly round but this is the beauty of hand made cookies) bake at 350°F for 20 minutes. Let the cookies cool completely on a rack. Dust with icing sugar or if you prefer sugar and cinnamon. They can easily be frozen and in this case dust with icing sugar after thawing just before serving. |

Notes: This recipe is very versatile, you can add some raisins or toasted walnuts. Use the cinnamon or vanilla instead of lemon zest. Make the recipe your own.
