¾ c. sugar
1 c. shortening
1 egg
1 c. cooked and mashed carrots
2 c. flour

2 t. baking powder
¼ t. salt
1 t. lemon extract
Juice and rind of 1 orange
1 t. soft butter
Powdered sugar

Directions:
Directions:
1. Cream shortening and add sugar and cream well.
2. Add egg and beat well.
3. Add carrots and flavoring, then add sifted dry ingredients.
4. Drop by teaspoonful on greased baking sheet and bake in 375º oven for 12-15 minutes, or until brown on bottom.
5. While still warm, ice with icing made by combining the orange juice and rind and butter, add enough powdered sugar to make a rather stiff icing.
