1-¼ cups margarine, room temperature
¾ cups firmly packed brown sugar
½ cup granulated sugar
1 egg
1 teaspoon vanilla
1-½ cups all purpose flour
1 teaspoon baking soda
½ teaspoon salt (optional)
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
3 cups oats (Quaker quick or old fashioned, uncooked)

Heat oven to 375º

In small bowl, combine flour, baking soda, salt and spices, set aside. In larger mixing bowl, beat margarine and sugars until creamy. Beat in egg and vanilla. . Add flour mixture & mix well. Stir in the oats. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8-9 minutes for a chewy cookie; 10-11 minutes for crisp cookies. Cool 1 minute on the sheet before removing to a wire rack.
