Ingredients:
5 c flour
1 tsp salt
1 lb of Tenderflake lard
2 eggs
1 tbsp. vinegar
cold water

Directions:
In a large bowl, mix the flour and salt. Cut in the lard with a pastry blender and then rub the mixture between your hands until the pieces of lard are very small.

Put 2 eggs in a 1 c measuring cup, add vinegar and fill to 1 cup with cold water. Add to the pie crust and mix as much as possible with a wooden spoon, then use your hands to finish it. Do not overmix it as it will become tough. And if it feels slightly sticky, it's probably okay. It's easy to add too much flour and that makes it hard to roll out.

Roll out on a floured surface until very thin.

5 double crust pies

Personal Notes:
If you don't use all the dough, it freezes very well. I usually make all the pies and freeze them uncooked. Then cook in a 425 oven for about 10 minutes. Cut 2 or 3 slits in the top so the steam can escape. Continue cooking until the crust is browned and the fruit is tender when a fork is inserted through one of the slits.
