1 cup white sugar
1/2 cup brown sugar
1 cup butter or margarine
1 egg
1 1/2 cup gluten free all purpose flour mix
3/4 tsp xanthan gum
1 tsp baking soda
1 tsp baking powder
1/2 salt (to taste)
1 1/4 cup oatmeal
3/4 cup cocoanut

Directions:
Directions:
Pre - heat oven to 350'
Cream first 4 ingredients.
Sift dry ingredients - not oatmeal and cocoanut
Add sifted dry ingredients to creamed mixture.
Stir in oatmeal and cocoanut.

Drop on parchment lined cookie sheet or a greased cookie sheet.
Bake 8 - 10 minutes until lightly brown.

Cookies do spread a lot, so it is a good idea to test bake one to see if they might need and extra tbsp of GF flour.
You may also chill dough before baking.

Cool on cookie sheet a few minutes and then put on cooling rack.
