4lb sirloin tip or bottom round roast
3 Tbsp olive oil
1 beef bouillon cube
1½-2 cups water (boiling)
15oz can chopped tomatoes
6 small onions, peeled
4 carrots, peeled & cut into half
1 stalk celery, in thirds
1 bay leaf
1 bunch fresh green beans
6 small potatoes, peeled & Halved
15oz frozen sweet peas

In Dutch oven, sear meat at high med-temp until browned on all sides. Turn down temp to a high simmer. Add water mixed with bouillon cube, tomatoes, onion, celery and bay leaf. Simmer ½ hour. Add carrots, green beans, potatoes and peas. Simmer on low for another hour, checking vegetables for doneness. Remove celery and bay leaf. Serve remaining ingredients with hot with a crusty bread. (you can omit potatoes and serve over mashed potatoes instead)
