6-8 Celery stalks - chopped smaller
2 Large (or 5 medium) Onions - chopped smaller
3 lbs. Sausage. Ground or squeezed from casing
1-2 lbs. Ground beef
I pkg. Giblets OPTIONAL Should be finely chopped or pureed. (Discard lining, muscle, anything hard)
5 medium Apples - Peeled and chopped.
2-3 lbs. mushrooms, chopped after rinsing and draining
10 slices dried bread broken up and moistened. Can substitute cut-up bread crumbs.
1 can condensed cream-of-mushroom soup (add the milk used to rinse the can)
2 cups oatmeal
1-2 eggs
1 tsp. Thyme
1 tsp. Sage
1 tsp. Nutmeg
Salt and pepper to taste

Wash and dry the turkey cavity and salt the inside before adding filling.

Brown the sausage and ground meat and place in large bowl. Then add all the ingredients listed above and mix thoroughly with your hands. Wait until entire mixture is cold before stuffing the bird.

Some portion of your filling will not fit in the turkey, so you may want to cook some or all of it outside of the bird. In either case, put the entire amount that you do not put into your turkey into one or more baking dishes and bake in the oven at 350º for45 Minutes.

Editor's Note: Some of our family gets a little squeamish about the giblets, specifically about handling them and the notion that they're in the food. If you leave them out, you can tell from the other ingredients, it will still taste wonderful, so don't feel bad if giblets are not for you. For me it just keeps it authentic, and I love this dish just the way mom made it. She would typically take the largest portion of filling leftovers and send them home with Rosie and me, back in the days when we celebrated Thanksgiving at Joan and Kaz's house.
