Ingredients: 1 pkg. Tenderflake lard 2 eggs, gently mixed 1/4 cup sugar 1 tsp. vanilla 1 pkg. yeast 1 cup milk 1 tsp. sugar 4 1/2 - 5 cups all purpose flour 1 small jar E.D. Smith seedless raspberry jam or filling of your choice

Directions:Preheat oven to 300ºF. In a large bowl mix lard, eggs and 1/4 cup sugar together well. Add vanilla. Warm milk in microwave to the touch. Add I tsp. sugar and yeast. Mix with a spoon. Let stand until risen. Add yeast to lard mixture and mix well. Add flour and mix well to form dough consistency. Knead dough 5 minutes. Break dough into 6 balls. Pour some flour on waxed paper, put balls on and cover with plastic wrap. Work with one ball at a time. Roll 1 ball into a 15 x 15 diameter circle. Cut into 12 pie shape pieces. A pizza cutter works great for this. Put about 1/2 level teaspoon of jam on the wide part of the piece about 1/2" from the edge. Start rolling at that end gently all the way down to thinnest end. Curve cookie in a crescent shape. Put on ungreased or parchment paper lined cookie sheet. Cover with a cloth for about 10 minutes. Take cover off and bake until a little brown. Remove from oven and let cool. Sprinkle sifted icing sugar on top of cookies or roll in icing sugar. Put in paper muffin liners. Store in an airtight container. ***If cookies are browning too fast and not fully cooked cover with a piece of foil and lower heat to 200ºF for about 10 minutes. |
