Directions:
1. Sift 4 1/2 cups cake flour with 1 tsp baking powder
2. Grease 2 large cookie sheets, sprinkle with anise seed or use 6 drops anise oil (1/4 tsp)

In large bowl mix at medium speed, beat 4 large eggs light. Gradually add 1 lb powdered sugar sifted—beat well.

With a wooden spoon, blend in flour mixture and pinch of salt. Refrigerate for 1 hour. Roll dough in 1/2" thick on lightly floured surface. With floured springeli, form or use a rolling pin to print pictures on surface. With cutting wheel, cut cookies on lines between pictures. Let stand on cookie sheets at room temperature at least 12 hours (I let them stand all night).
Bake at 325º until very lightly colored Cool and store in tight container. Bring to room temperature before serving. These also freeze well.
