1/2 cup butter
1 1/2 cups flour
3/4 cup sugar
FILLING
20 oz tin crushed pineapple
1/2 cup sugar
3 Tbsp butter
3 Tbsp cornstarch
TOPPING
2 egg whites (beaten stiff)
1/2 cup sugar
1/2 cup fine shredded coconut
1/2 tsp baking powder
Directions:
Directions:
Mix first 3 ingredients well. Press into 9x13 pan. Bake at 350ºF for 5 min. Mix filling ingredients together in a pot, cook till thick ,pour on top of baked base. Mix topping ingredients well. Spread over filling. Bake at 350ºF till golden brown.
