½ cup butter
1 cup white sugar
1 egg
¼ cup molasses
1 tbsp. instant espresso powder or instant coffee
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp.cinnamon
1 tsp.ginger
1 tsp baking soda
½ tsp cloves
1 cup raisins
2 tbsp white sugar

Directions:
Directions:
In a large bowl, use an electric mixer or a food processor to cream butter and sugar until light. Beat in egg, molasses and coffee.
Mix or sift dry ingredients in another bowl. Stir into batter. Add raisins. Knead dough and refrigerate two hours.
Divide dough into eight equal pieces. Roll each piece into a log about 1” (2.5 cm) in diameter and about 6” (15 cm) long. Place on two stacked cookie sheets (line top one with parchment paper) and press flat. Bake in a preheated 350 F oven for 12 to 15 minutes.
Sprinkle cookies with sugar. Cut into ¾” (2 cm) wide slices on the diagonal (you should get 7 to 8 cookies per strip). Cool on racks.
