Ingredients:  
1 (20 ounce) can unsweetened crushed pineapple
2 tablespoons lemon juice
3/4 cup date butter (1/2 cup dates + 1/4 cup water, blended)
1/2 teaspoon lemon OR vanilla extract
2 eggs OR 4 tablespoons soy flour
1/2 teaspoon salt
1 cup chopped walnuts
2 cups oats
2 cups wheat flour
1 teaspoon baking soda


Directions:
Directions:
Combine all ingredients as listed. Adding sifted flour and baking soda last. Mix well.
Bake cookies at 375 degrees for about 15 minutes.
