1/8 cup coconut oil
1/8 cup Butter
1/2 cup equivalent Sugar Substitute
1/4 cup Sugar Free Maple Syrup
2 Eggs
1 teaspoons Vanilla
1 1/2 cups Whole Wheat All Purpose Flour
1 teaspoons Cinnamon
1/8 teaspoon Allspice
1/8 teaspoon Nutmeg
1/8 teaspoon Ginger
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
3 Tablespoons Ground Flaxseed
1/2 cup Raisins
1/2 cup Walnuts, chopped
1/4 cup Almonds, chopped (optional)
1 cups Carrots, grated

Frosting (Optioinal)

1 1/2 cups Sugar Substitute
1 cups Butter
6 oz Cream Cheese
1 teaspoons Vanilla

Directions:

Pre-heat oven to 375º F

Cream together butter, sugar, eggs, syrup and vanilla. Mix in dry ingredients and then mix in carrots. Add raisins and nuts and fold in. Using your hands form 2” balls and place on a cookie sheet. With a fork push down the cookies to flatten. Cook 13 min. Cool completely.

In a large mixer, mix together all frosting ingredients. Beat until smooth and fluffy. When cookies are completely cooled, spread frosting on top of each cookie. Enjoy. I store these in the refrigerator
