Ingredients: 2 eggs slightly beaten 1 C. corn meal 1 C. sweet milk 1 C. cream style corn or whole corn ¾ tsp. salt ½ baking soda ¼ C. bacon drippings 1 lb.hamburger 4-5 Jalapenos seeded and diced or 1/2 of a bell pepper ½ onion diced 8 oz. longhorn cheese grated sliced pickled jalapenos (optional) salt and pepper to taste

Directions:Preheat oven to 350º Melt bacon grease in iron skillet
Mix together the first 6 ingredients, salt and pepper to taste Stir in bacon drippings and set aside
Lightly brown hamburger in same skillet when half way done Add onion and peppers and cook until softened drain on paper towels and wipe out pan. Grease pan and sprinkle corn meal to cover bottom of cast iron skillet and brown in oven Pour in half of the batter Add meat mixture, cheese and sliced jalapenos pour on remaining batter Bake for 1 hour until set Let rest about 5 minutes before slicing |
