½ cup chopped onion
3 tbsp of butter or 3 tbsp of margarine (melted)
2 (10 ¾ ounce) cans of cream of chicken soup
2 cups shredded cheddar cheese (divide into 1 ½ cups and ½ cup)
1 cup milk
3 ½ cups chopped cooked chicken
2 ½ cups of cooked macaroni (drained)
¼ cup Ritz cracker crumbs
salt and pepper to taste

Directions:
Directions:
1. In a large skillet over medium high heat, saute onions in butter until the onions are tender.
2. Add in soup and 1 ½ cups of cheese.
3. Gradually stir in milk.
4. Cook over medium heat until cheese melts.
5. Stir in chicken and macaroni.
6. Add salt and pepper to taste.
7. Transfer mixture to a greased 2 ½ quart casserole dish.
8. Sprinkle the mixture with cracker crumbs
9. Bake at 350 º for 30 minutes or until heated through.
10. Remove from oven and top with the remaining ½ cup of cheese and bake for an additional 5 minutes.

I substituted 1 can of the cream of chicken soup with 1 can of cream of celery soup. I added 1 15 ounce can of peas (drained).
