3/4c butter
3/4c sugar
2 large eggs
2 1/4c flour
2 tbsp baking powder
1 tsp vanilla

Directions:
Preheat oven to 400º. Cream butter and sugar, beat in eggs and vanilla. Add baking powder and flour one cup at a time. Mix after each addition. Dough will be very stiff. Blend the last of the flour in by hand.

For cookies: Divide into two balls. Don not chill dough. Roll on floured surface into a circle 12" in diameter. Dough should be 1/8" thick. Flour cutters each time they are use. Remove dough around cookie before place on baking sheet. Bake on top rack of oven for 6-7 minutes until cookies are light brown. Remove from pan immediately after baking. Makes approximately 30 cookies.

For tartlets: Roll cookie dough no more than 1/8" thick. Cut dough with 2 1/2" round cutter and gently press circles in mini-muffin pans. Fill and bake at 350ºfor 15 minutes. Cool in pan for 5 minutes, then remove to a rack. See tartlet recipe for filling ideas.
