1 can (250 ml) crushed pineapple
2 cups sifted flour
1½ tsp. baking powder
¼ tsp. baking soda
½ cup shortening
1 egg
1 tsp. vanilla
¼ tsp. salt
1 cup brown sugar

Directions:
Directions:
Drain pineapple, reserving liquid. Preheat oven to 400º.

Sift flour with baking powder, baking soda and salt. Set aside.

In large bowl, cream shortening and sugar until fluffy. Beat in egg and vanilla. Add pineapple and mix well.
Stir in flour mixture. Drop by rounded tsps. about 2" apart onto baking sheet. Bake 8-10 minutes
Remove to wire racks
Mix 4 cups icing sugar with 4-5 tbsps. pineapple liquid until smooth and spread tops of cookies while still slightly warm.
