Mint Cookies Recipe

¾ cup Margarine (1 ½ STICKS)
1-1/2 cup Brown Sugar
2T Water
1 pkg (12oz) Chocolate Chips
2 Eggs
2-1/2 cup Flour
1-1/4 tsp Baking Soda
2 boxes Andes Mint Candies



Directions:
Directions:
Cook over low heat brown sugar, butter and water until melted. Remove from heat. Stir in chocolate chips. Cool for 10 minutes. Add eggs… one at a time…beating well. Add flour and soda and beat until well mixed. Chill dough 1 hour. Roll into balls and bake on FLOIL-LINED cookie sheet.


Bake 350 degrees for 8 to 9 minutes. DO NOT OVERBAKE (I usually bake for about 8-1/2 minutes)


While cookies are still hot on cookie sheet, top each cookie with a piece of the Andes Mint Candies. Transfer over to cooling racks and wait about 3-4 minutes. By then the chocolate is melted and you can
swirl with a knife.

Chocolate will “set up” again in about a half hour and become firm to the touch so you can store the cookies in an airtight container.
