3/4 cup flour
2 1/2 t baking powder
5 t butter
1 cup sugar
2 egg yolks (well beaten)
1 t vanilla
1/2 cup shredded coconut
3 1/2 cups Post Toasties
2 egg whites (stiffly beaten)

Directions:
Directions:
Sift flour once, measure; add baking powder and sift 3 times. Cream butter and sugar thoroughly. Add egg yolks and beat well. Add flour gradually beater after each addition. Add vanilla, coconut, Post Toasties and egg whites. Drop by teaspoons on greased cookie sheet. Spread thin and bake in hot oven, 425º for 5 to 7 minutes. Makes 3 1/2 dozen. Try baking on brown paper (or silpat).
