6 cups flour
1 tsp salt
½ tsp baking soda
½ tsp cream of tartar

Wet:
¾ cup vegetable oil
1¼ cup white sugar
2 Tbsp water
2 eggs, room temperature

Icing:
1 stick butter (= ½ cup)
⅓ cup sour cream
¼ tsp salt
2-3 Tbsp milk
4 cups powdered sugar
¼ tsp vanilla
1-2 tsp food coloring

Dipping:
2 Tbsp white sugar
Pinch of salt

Directions:
Combine dry ingredients. Set aside. Combine butter, and sugars for 2 minutes. Stream in oil. Add water, vanilla and beat in eggs, 1 at a time. Add dry ingredients. Using a 1 ½ “ ice cream scoop, scoop uniform sized scoops on parchment lined cookie sheet. Combine dipping sugar and salt on a plate. Dip a glass in the sugar mixture then smash down cookie dough on the cookie sheet, leaving a jagged edge. Bake at 350º for 8 minutes. Cool on rack. For icing, mix together butter, sour cream and salt. Add sugar a little at a time, alternating with milk. Add more liquid if needed. Dollop icing into each cookie middle and spread it over the center with the backside of a spoon to flood the cookie. Let icing dry to the touch and store in an airtight container in the fridge. Store in the fridge.
