½ cup coconut oil
½ cup plus 1Tbsp honey
Mix well
2 eggs
1 Tbsp vanilla extract
Mix well
½ tsp salt
1 tsp baking powder
¼ tsp Baking soda
2 cups coconut flakes
Optional: 1 cup Enjoy Life mini chocolate chips

Combine coconut oil and honey and mix well
Add eggs and vanilla extract and mix well
Add all other ingredients and mix well with 2½-3 cups almond flour
Adjust flour for proper dough thickness
Place large spoonfuls on cookie sheet
Bake at 375* approx 12 minutes

My love of making cookies started in high school, on the wrestling team. Workout all week, watch weight, compete, eat cookies. Repeat. Over time I've made a bunch of my own recipes, always experimenting with ingredients. This recipe is a mix of several recipes I tried looking for a good gluten free, dairy free option. You can make it without the chocolate chips for a classic macaroon, but the mini chips from Enjoy Life add a punch to these macaroons.

I've been a coach at Crossfit Novato since 2016. I love the interaction with athletes of all abilities and goals, and the community that develops as we push ourselves to improve together. By profession I'm a dentist, practicing for 20 years in Novato. I've been a mountain biker my whole life, and love exploring the local mountains of Marin, both on my bike and hiking with my wife.
