1 eggplant sliced in ¼” slices
16 oz. can tomato sauce
16 oz. can Italian style stewed tomatoes
½ cup catsup
Progresso Italian style bread crumbs

Directions:
Directions:
Soak eggplant slices in salt water for at least 5 minutes. Dry slices on paper towels and brush with olive oil. I usually put slices in an oblong Pyrex casserole, cover with plastic wrap and microwave for about 6 minutes, until soft. Or you can broil slices until they are lightly browned on both sides.

Combine tomato sauce, stewed tomatoes and catsup in a bowl.

In an oblong casserole dish put sauce, eggplant slices, sauce, bread crumbs, repeating layers until eggplant is used up, ending with bread crumbs.

Bake at 350 degrees for 1 hour.
