1 ½ cups flour
½ cup Dutch-process cocoa powder
1 teaspoon baking powder

8 tablespoons (½ cup or 1 stick) butter softened

Directions:
Preheat oven to 375˚

In a medium bowl, whisk together flour, cocoa powder, baking powder and salt.
In a large mixing bowl, beat together butter and sugar until smooth and creamy. Add melted shortening and mix until combined.
In a small bowl, whisk together egg and vanilla. Pour into the butter mixture and mix until creamy. Add dry ingredients and mix just until combined.
Using a tablespoon cookie scoop, drop heaping mounds of dough (closer to two actual tablespoons) onto baking sheets lined with parchment paper. Place into the oven and bake until the edges of the cookies are firm, about 11 to 14 minutes. Remove and place sheets onto a wire rack to allow cookies to cool completely.
