1/2 cup powdered stevia
3 tablespoons of cocoa powder
1/2 stuck butter (no salt)
1/2 cup soy milk
1 1/4 cup old fashioned oatmeal or quick cook oats
1/2 cup crunchy almond butter
1 teaspoon vanilla

Directions:
Directions:
Line a cookie sheet with parchment paper or aluminum foil.
Combine stevia, cocoa powder, soy milk and butter in a small heavy bottom sauce pan. Mix dry ingredients until well blended with soy milk and begin heating on medium high flame until butter melts and mixture starts to boil. Boil on medium low heat for 1 minute. Counting to sixty works better than setting a timer.
Remove mixture from heat and quickly add the almond butter and vanilla. Blend well and add the oatmeal. Drop by teaspoonfuls on the prepared cookie sheet and let set for 30 minutes or place in refrigerator to set.
Can be stored in refrigerator for 1 week.
