2 cups (16 oz). organic peanut butter - creamy style
1/3 cup powdered stevia
2 teaspoons baking soda
2 teaspoons vanilla
2 eggs
1 Lilly's chocolate bar (no sugar Stevia sweetened chocolate)

Directions:
Directions:
Preheat oven to 350 degrees and line large cookie sheet with parchment paper
Mix all the ingredients until blended together in food processor. Mixture will be crumbly and sticky.
Using a tablespoon of dough for each cookie roll into ball and then flatten slightly on the baking sheet with palm of hand.
Bake cookies for 6 - 7 minutes until firm. Cut the Lilly's chocolate bar into pieces along the indentations.
Remove cookies from oven and press a piece of Lilly's chocolate into each cookie. Return to oven for an additional minute. Cool before removing from cookie sheet. To store - set the chocolate by placing the cookies in refrigerator for 30 minutes. Can be stored in refrigerator or freezer for weeks.

If you don't like chocolate - you can eliminate the Lilly's chocolate pieces and add a few chopped peanuts to the top of each cookie. These cookies are Steve's best effort in the kitchen - always delicious.
