3 eggs beaten till fluffy
1 cup oil
1 1/2 cups sugar
2 cups peeled and grated zucchini
3 t. vanilla

Mix together:
3 cups flour
1/4 t. baking powder
1 t. baking soda
1 t. salt
1 t. cinnamon
1/2 cups nuts (if desired)

Directions:

Add dry ingredient mix to wet ingredients. Mix just until blended.
Bake at 325 for 1 hour.

Mom made this for many years. I do not add nuts. You could also add raisins. It is moist and delicious!
