4 c. organic flour
1 t. baking soda
1 t. baking powder
1/4 t. salt
2 T. pumpkin pie spice
3 sticks unsalted butter, at room temperature or soften in microwave
1 1/3 c. dark brown sugar, packed
4 t. pure vanilla extract
4 large eggs, at room temperature
1 can organic pumpkin
2 c. semisweet chocolate chips, I use LIly’s or Enjoy Life

Preheat oven to 375º. Line a baking sheet with parchment paper. In a medium bowl, combine flour, baking soda, baking powder, salt, pumpkin pie spice and set aside.

In a large bowl, beat butter, brown sugar and vanilla until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in pumpkin. Add flour mixture gradually, beating to incorporate. Stir in chips. Use a medium scoop to drop cookie dough onto baking sheet. Bake for 10-12 minutes until edges are slightly golden, don’t overbake. Allow cookies to rest a few minutes before moving to a rack to cool.

This recipe is a family favorite that I found in Family Life magazine in 1998. Aunt Jo and Aunt Kath both tried to submit it as their recipe, so you know it is popular.
