• 1-pound hamburger
• 2 Tbsp chopped onion
• 1 egg
• ½ Cup crushed pork rinds
• ½ Cup Heavy Whipping Cream
• 1 tsp salt
• 1/8 tsp pepper
• 1 Tbsp Golden Monk fruit Sweetener
• ½ tsp Allspice
• Ό tsp Nutmeg
Gravy
• 1 cup water
• 1 tsp xanthan gum
• 1 cube beef bouillon

Directions:

1. Preheat oven to 350 degrees
2. Mix all ingredients for the meatballs together in a large mixing bowl, then form into “golf ball” size meatballs.
4. In a skillet over medium heat, brown the meatballs until a crust forms, remove from heat and place meatballs in a large baking dish.
6. Keep the beef drippings in skillet.
7. In a separate bowl, mix 1 cup water with 1 tsp xanthan gum.
8. Add water mixture to skillet with drippings and add beef cube.
9. Bring to boil, while stirring. If gravy is too thick add more water. Pour gravy over meatballs and bake for 1-1 ½ Hours.
