1 t. baking soda
1 t. kosher salt
1 t. pure vanilla extract
1 1/2 c. semisweet chocolate chips, I like Lily’s dark chocolate, but have also used Enjoy Life
1/3 c. coconut oil, melted
1/4 c. pure maple syrup
2 eggs
2 3/4 c. blanched almond flour
1/4 c. coconut flour

Directions:
Directions:
Preheat oven to 375º. Line baking sheets with parchment paper.

Combine dry ingredients in a medium bowl. In a small bowl, beat eggs, syrup and vanilla with a hand mixer. Pour wet ingredients into dry ingredients and beat with hand-mixer until combined. Add melted coconut oil and blend until combined. Stir in chocolate chips.

Drop balls of cookie dough about a tablespoon in size, I like the medium scoop (~ 1 1/2 inches), onto prepared baking sheet.

Bake for approximately 15 minutes.

I have tried MANY paleo chocolate chip recipes. I have also modified this one several times. I think it is by far the best one I have ever had for reasons too numerous to list. I recently added some course salt to the top pre baking, to create a sweet and salty version, it was not bad and is worth repeating if you desire.
